Rice Cooker Not Working? Fixes (2026)

Rice cooker problems fixed: mushy or crunchy rice, cooker switching to warm too early, burning, and keep-warm issues.

Nearly all rice cooker problems are ratio, rinse, or heat-sensor issues, not broken appliances. Diagnose in this order before assuming the cooker is at fault.

Rice comes out mushy or gummy

Too much water, or unrinsed surface starch. Rinse white and sushi rice until the water runs mostly clear, and use the cooker's own measuring cup with its water-level lines; a standard US cup throws off the ratio. For already-mushy rice, spread it on a sheet pan to steam off moisture.

Rice is crunchy or undercooked

Too little water, or the lid was opened mid-cycle letting steam escape. Brown rice in a basic cooker is the classic case: soak it 30 minutes first or accept that a one-touch thermostat cannot finish the job. Never open the lid during cooking; the steam is doing the work.

Cooker flips to warm before rice is done

Food or residue is stuck on the heating plate or the inner pan's bottom sensor area, tricking the thermostat. Clean the heating plate with a damp cloth and check the pan sits flat. On older cookers, a weak thermostat spring causes premature switching; replacement thermostats are cheap but model-specific.

Rice burns or forms a thick crust on the bottom

Some crust is normal in basic cookers, but a thick burned layer means the keep-warm ran for hours or the nonstick coating has failed. Limit keep-warm to a few hours, fluff rice after cooking, and inspect the pan coating: scratched or peeling nonstick cooks unevenly and should be replaced.

Questions, answered

Why does my rice cooker boil over?

Overfilled pot or starchy water foaming up. Never exceed the maximum water line, rinse the rice to reduce starch foam, and wipe a thin film of oil or butter around the inner rim to break the foam.

How long can rice stay on keep-warm safely?

Food safety guidance says 4 hours maximum at proper holding temperature (above 140 F). Quality warmers hold temperature well; basic ones drift. When in doubt, refrigerate leftovers within 2 hours and reheat with a splash of water.
