Slow Cooker Not Working? Fixes (2026)
Slow cooker problems fixed: food undercooked or overcooked, cooker not heating, and lid and liquid issues.
Slow cooker failures are almost always time, temperature-setting, or lid problems. Work through these before suspecting the heating element.
Food is undercooked after the full time
The lid was lifted repeatedly (each peek adds 15 to 20 minutes), the cooker was overfilled past two-thirds, or large frozen-adjacent ingredients went in cold. Keep the lid on, fill between half and two-thirds, and add an hour for very full cookers. If it is consistently undercooking on a familiar recipe, the thermostat may be failing.
Food is overcooked and mushy
The cook ran too long for the ingredients: vegetables and dairy break down past 8 hours, and lean meats dry out. Match recipes to your actual away-time, use auto-warm models to hold finished food, and add delicate ingredients in the last hour. Cut root vegetables larger to slow their breakdown.
Cooker does not heat at all
Check the outlet, then the cooker's own fuse or thermal cutoff: many models have an internal fuse that trips after overheating. If the crock is cracked, some cookers will not engage heating as a safety measure. A dead heating element in an old cooker usually means replacement, as element repair exceeds the cooker's value.
Too much liquid / watery results
Slow cookers barely evaporate: reduce added liquid to half what a stovetop recipe uses, since meat and vegetables release their own. Fix a watery finished dish by removing the lid for the last 30 to 45 minutes on high, or thicken with a cornstarch slurry stirred in at the end.
Questions, answered
Why is there condensation all over the lid?
Normal: the sealed lid traps steam, which condenses and drips back. That self-basting is part of how slow cookers work. If excessive liquid pools, crack the lid slightly with a wooden spoon for the last hour.
Can I use a slow cooker liner?
Yes, disposable liners make cleanup trivial and do not meaningfully affect cooking. They are the highest-ROI convenience purchase in slow cooking. Avoid them only if you sear in the vessel first, as liners cannot take direct high heat.
